1. Gravy – and absolute must-have
A beef wellington without gravy is unheard of. We have the perfect gravy recipe to top off an already flavourful dish. First things first, the ingredients:
- 2 onions
- 4 sprigs of fresh thyme
- 1 heaped teaspoon blackcurrant jam
- 100ml Maderia wine
- 1 heaped teaspoon English mustard
- 2 heaped teaspoons plain flour, plus extra for dusting
- 600ml beef stock
Start off by peeling and roughly chopping the onions, put them in a pan and fry them along with the thyme leaves, stirring occasionally. Then, add the jam and stir and simmer until a shiny, dark colour. Next, add the Maderia wine, flame with a match and cook away. Finally, stir in the mustard and flour, gradually followed by the stock.
And just like that, you’re on your way to turning your dinner party into a festival of flavours!
2. The perfect creamy mash
If there’s one thing, we Maltese are proud of, it’s our potatoes. We practically have potato blood in our veins, right? Read on for all the ingredients and instructions for the tastiest creamy mash below.
Ingredients for creamy mash potatoes:
- 1kg potatoes,
- 1 teaspoon salt
- 1/2 cup hot milk
- 1/3 cup unsalted butter
- 6-8 cloves fresh garlic finely chopped
- 1/4 cup sour cream
- 1/4 cup fresh shredded parmesan cheese
- 1 tablespoon fresh chopped parsley to garnish
Firstly, peel and cut the potatoes into quarters then boil until fork tender. Next, heat 1 tablespoon of the butter in a small pan over medium-high heat, sauté garlic until fragrant for about 1 minute then set aside and keep warm. Add the remaining butter, cooked garlic, hot milk, and sour cream to the potatoes, and mash everything together until smooth. Finally, add some parmesan cheese and season with salt and pepper.
