Chicken is without a shadow of a doubt the most loved type of poultry. Apart from the fact that chicken offers multiple health benefits such as being high in protein, low in fats, and full of calcium and phosphorous; it has also been proven to boost one’s immunity. The best part about chicken is that one can find a wide range of different chicken products that can be cooked in an infinite number of super delicious ways. We’re about to share 5 absolutely amazing chicken recipes for 5 different types of chicken cuts.

1. Chicken Breast Piccata

First up is the chicken breast – a staple in most Maltese family households. And as an added bonus, we have two different types of chicken breasts for you to choose from: fresh local chicken breast and organic chicken breast. Here we share with you a simple, yet flavourful chicken piccata recipe.

First, start off by sourcing the following ingredients that are easy to find from anywhere on the islands.  

  • 2 boneless, skinless chicken breasts 
  • Salt & pepper 
  • 1 cup flour for dredging 
  • 10 tbsp butter 
  • 5 tbsp light olive oil 
  • 11 cups chicken stock 
  • 1 minced shallot 
  • 1 tbsp minced garlic 
  • 1 tbsp lemon juice 
  • 2tsp lemon zest 
  • 2 tbsp capers 

Kick things off by slicing the chicken breasts into thin, horizontal pieces. This is so the chicken breasts can cook evenly and quickly during the pan-frying process. The next step is to dredge the chicken – simply lottoland season them with some salt and pepper and cover with a coat of flour. Now, fry the chicken breasts in a mix of 3 tablespoons of butter and 2 tablespoons of light olive oil.  

The next step is to make the piccata sauce. Sauté the garlic and the minced shallot in the leftover butter and oil and add another 3 tablespoons of butter and 2 more olive oil. Then, add in the stock and simmer for a few minutes to reduce it by half. Add in more butter, capers, lemon juice, and lemon zest. Lastly, season with some salt and pepper and serve alongside your pasta or salad of choice.

2. Marinated Chicken Wings

Up next, marinated chicken wings! Keep on reading because we’re about to share the recipe for a simple marinade that will make your wings taste so juicy and flavourful, it will be love at first bite. Start off by finding the following ingredients.  

  • ½ cup of low-sodium soy sauce 
  • 1 tbsp brown sugar 
  • 1 tbsp lemon juice 
  • 1 tbsp sriracha/hot sauce 
  • 1 tbsp sesame oil 
  • 1 ½ tsp hoisin 
  • 2 tsp garlic powder 
  • 1 tsp fresh minced ginger or ½ tsp dried ground ginger 

The next steps are simple. Mix all the liquids together in a medium-sized dafabet bowl and whisk in the garlic powder and ginger. Then, place the wings in a large bag, add in the liquid and let it marinate in the fridge for about 2 hours.  

Lastly, bake the wings at 230°C until they reach an internal temperature of 75°C, about 40 minutes. And just like that, you’ve got yourself the perfect, mouth-watering marinated chicken wings.

3. Honey Mustard Baked Chicken Drumsticks

Short on prep time? Well, in that case, this simple 4-ingredient chicken drumstick recipe is the one for you. All you’ve got to do is put the drumsticks in a baking tray and cover them with a mixture of the following 4 ingredients.  

  • Dijon mustard 
  • Honey 
  • Minced garlic 
  • Cornflour or corn-starch 

Lastly, pop the baking tray in the oven for rajbet about 50 minutes at 180°C. Yes, it’s that simple. Just serve with some creamy mash or roast potatoes and let your tastebuds run wild!

4. Orange Boneless Chicken Thighs with Parsnips, Maple, and Pecans

Next up, we’re sharing a recipe that is a sure-fire way to have you, and everyone that tries it, reaching out for seconds – even if you’re full to the brim! 

  • 2 blood oranges (1 juiced and 1 thickly sliced) 
  • 3 tbsp maple syrup 
  • 2 tbsp olive oil 
  • 2 tbsp sherry vinegar 
  • 1 tbsp wholegrain mustard 
  • 1 tbsp melted cranberry or redcurrant jelly 
  • 2 parsnips, quartered, peeled and the core cut out and discarded 
  • 4 chicken thighs, skin on 
  • 140g small shallots, left whole but peeled 
  • 2 thyme sprigs, broken up a bit 
  • 25g pecans, barely chopped 

Firstly, heat the oven at 180°C then juice 1 of the oranges and whisk together with the olive oil, vinegar, jelly, mustard, and maple syrup. Next, put the chicken thighs, shallots, and parsnips in a roasting tray. Then, drizzle half the orange sauce alongside some seasoning and toss to coat all the ingredients then roast for 35 minutes.  

Once the 35 minutes are up, remove the tray from the oven and add in the orange slices, thyme, and drizzle the remaining orange sauce and roast for another 15 minutes until they’re tender, cooked through, and golden. Lastly, mix in the pecans, roast for another 5 minutes, and get ready to serve.

5. Cordon Bleu and Pomegranate Warm Salad

To anyone that says, “salads are boring”, we’re about to prove you wrong with this tantalising cordon bleu and pomegranate warm salad. The first step is to get all the following ingredients. 

For pomegranate balsamic dressing:

  • 1 tbsp balsamic vinegar 
  • 1 tbsp pomegranate juice  
  • 2 tsp pure maple syrup 
  • Pinch dried thyme 
  • 4 tbsp extra virgin olive oil 
  • Salt and pepper to taste 

Warm chicken salad:  

  • 2 cordon bleu pieces  
  • 250 g cooked grains (freekeh, quinoa, or farro)  
  • 80 g mixed peppery salad leaves (rocket, spinach, and watercress) 
  • ½ pomegranate (seeds only) 
  • 1 ½ tbsp toasted pine nuts

Start preparing the warm salad by popping the cordon bleu pieces in the oven and cooking your grain of choice. 

While that’s cooking, make the pomegranate balsamic dressing by thoroughly mixing the pomegranate juice, maple syrup, olive oil, vinegar, thyme, and salt and pepper in a small jar.  

Once the cordon bleus are ready, cut them in strips or leave them whole and put them in a bowl with the mixed greens, cooked grains, pomegranate seeds, and toasted pine nuts.  Finally, drizzle the pomegranate balsamic all over the salad and serve straight away.
