5 surprisingly easy chicken breast recipes to taste
The Chicken breast is without a shred of doubt one of the most popular cuts of chicken meat and a household staple for many Maltese families. Chicken breasts can be incredibly versatile and are packed with beneficial vitamins. Here are 6 chicken breast recipes you can easily prepare – just like a professional chef!
Feta Cheese and Lemon Chicken Rice
An easy and basic go-to recipe with a tasty Mediterranean touch!
Get started by slicing up the chicken breast into 4 halves and mix them in a bag with
- 2 tablespoons of lemon juice
- 1 teaspoon of oil
- 2 cloves of minced garlic.
Let them rest for 5 minutes and then grill them in a pan over medium-high heat for around 6 minutes on each side. In the meantime, make sure you prepare a portion of your favourite rice.
Once both are ready mix in 2 tablespoons of lemon juice and around 80 grams of crumbled feta cheese to the rice. Mix it all up and let it rest for a few seconds until the feta cheese has divinely melted and then season to taste with a pinch of salt, pepper and a few leaves of basil. All you have to do now is to serve the rice with the chicken!
Oven Baked Chicken Breast Recipe
Pan frying a chicken breast can be tricky for some, so let’s get the oven to do the difficult work for you.
Simply brush the sides chicken breasts with olive oil and gently sprinkle on a mixture of pepper, salt, smoked paprika and garlic. Pop the breasts in the oven at 230°C for about 15 minutes. Once cooked you can serve this with a wide variety of sides like sweet potato and vegetables.
Always remember to check the chicken with a thermometer and ensure that they’ve reached an internal temperature of 75°C (165°F). Checking for the temperature also eliminates the usual guesswork involved when cooking chicken – which tends to result in overcooked breasts. Â

Honey Chicken Stir-Fry
This is one of our all-time favourite chicken breast recipes which can be ready in as little time as possible – just one pan!
Dice the chicken breast into bite sized cubes and cook in a wok or frying pan with a small drizzle of oil and a minced clove of garlic. Once the chicken has started to golden out, mix in 3 tablespoons of honey, 2 tablespoons of soy sauce and a pinch of salt and pepper. Let the chicken simmer in the mixture for a few seconds then remove it but leave the juices in the pan.
In the same pan add a drizzle of oil and a mixture of your favourite boiled vegetables like broccoli and carrots. Let them cook for a little while and then bring the chicken back to the pan and mix it in. To create a saucier texture whisk in a tablespoon of corn-starch mixed with water and voilà – its ready!
This recipe will also work nicely with Fresh Local Chicken Thighs or a Corn Fed Chicken Supreme.Â
Chicken Parmigiana
This fancy looking dish is a favourite for many chicken breast recipes lovers at restaurants and is brimming with different aromas.
In a small saucepan mix in
- 1 can of tomato sauce
- 2 teaspoons of Italian seasoning,
- half a teaspoon of garlic powder
Bring the sauce to a boil and let it simmer for around 20 minutes. As it simmers, prepare 2 separate bowls. gently beat an egg in one and combine 3 tablespoons of grated parmesan cheese with 50g of breadcrumbs. Dip the chicken in the egg, generously coat them with the parmesan and breadcrumbs and place them in a large pan over medium heat for around 5 minutes on each side (until cooked).
The magic comes in the final step – cover the top side of the chicken some slices of mozzarella cheese and cover the pan for around 3-4 minutes until the cheese melts. Once finished, you are ready to serve this delectable creation with the tomato sauce we prepared earlier.
Creamy Chicken Soup
This unique chicken soup recipe manages to create such an incredible taste with so few ingredients! When it comes to soups, the more time we give to slow cook the ingredients, the more delicious the result.
Pour in 2 litres of water, a tablespoon of salt and a chicken breast cut in halves (A Whole Chicken or Drumsticks will also taste wonderful!) in a large pot. As you bring the pot to a boil, thinly slice
- 3 medium onions
- 2 celery stalks
- 4 garlic cloves.
Once the water is boiling, mix in the vegetables and let the soup simmer on low heat for 30 minutes. Remove the chicken breasts from the pot and mix in 6 medium sized carrots sliced into 2cm pieces. Let it cook for another 40 minutes and then add the chicken breast back in to serve.
You can season this wholesome and cosy soup with some salt and pepper right before serving.Â
