How to become a pro chef in less than 10 minutes with the help of J&M Butcher’s superstars
This month, we’re putting the spotlight on some of our hard-working butchers; Filippo, Eliseo, and Ali. We asked each butcher what’s their favourite item on J&M Butcher’s oven-ready gourmet menu. So, in honour of our butchers, we’re giving you 3 recipes to pair their favourite oven-ready gourmet menu items. Keep on reading and you’ll become a pro gourmet chef in no time!
1. Lamb Leg with Garlic and Rosemary.
For Filippo simplicity is key.
“Each season we change our menu and during Easter we did some lamb dishes, my favourite was a very simple Lamb Leg with garlic and rosemary.”
No need to panic. Just because it’s no longer on our oven-ready gourmet menu, doesn’t mean you can’t do it yourself. Like Filippo said; it’s very simple. Don’t believe me? Check out the recipe and be the judge.
Ingredients for lamb leg:
- 1 large lamb leg with bone in
- 2 bulbs of garlic
- a few sprigs of rosemary
- 100ml olive oil
- 1 tbsp flaky sea salt
- 3 onions, roughly chopped
- 5 carrots, sliced in half lengthways
- 500ml chicken stock
- 2 tsp corn flour
First things first, make small incisions all over the lamb and insert 10 halved garlic pieces and little pieces of rosemary, then rub with some of the olive oil and add the salt all-over. Next, let the lamb sit on a wire rack for an hour at room temperature. Put the onions, carrots, remaining unpeeled garlic cloves, a few rosemary sprigs and the rest of the olive oil into the bottom of the roasting tray (under the lamb on its rack).
Last order of business, put the lamb leg in the oven and make some roast potatoes. Simple, straightforward, and absolutely flavoursome. Gourmet doesn’t mean complicated, you know.
2. Veal Girello with Polenta and Pea & Broad Bean Salad
Need to prepare a delectable meal but preparation time is limited? Then this is the perfect recipe for you!

“I like the Veal Girello, it’s veal mince we prepare in a sheet form. We spread ham and cream cheese in it and roll it in breadcrumbs. It is very easy to cook at home and a convenient meal that has everything.”
First order of business is to put the Veal Girello in the oven, then start preparing a simple 4-ingredient polenta.
Ingredients for polenta:
- 2/3 cup instant polenta
- 2 cups milk
- 20g unsalted butter
- 1 1/4 cups grated parmesan
Start by pouring the milk in a pan over medium-high heat and bring to boil. Reduce heat to low, add polenta and stir constantly for 5 minutes or until creamy. Lastly, stir in the butter and parmesan. Simple, yet packs a flavourful punch.
Ingredients for pea and broad bean salad:
- 1 cup fresh peas
- 1 cup podded broad beans
- 1 tbs white wine vinegar
- 2 tbs extra virgin olive oil
- 1 tsp Dijon mustard
- 1 tbs finely chopped flat-leaf parsley leaves
The first step is to blanch peas and broad beans in a pan of boiling salted water for 1-2 minutes until tender, then drain and refresh under cold water. In a separate bowl, whisk remaining ingredients together and drizzle over the peas and beans.
Serve all 3 together and you’ve got yourself a hassle-free finger-licking dinner!
3. Lamb Kofta Flatbreads with Yoghurt Sauce and Salad
Lastly, we’ve got Ali and he’s got a special reason why Lamb Kofta is his favourite item from J&M Butcher’s oven-ready gourmet menu.
“My favourite item from J&M Butcher’s gourmet menu is definitely the lamb kofta. I came up with its recipe so, I am proud that I could incorporate the flavours of my country at J&M Butcher too. You can grill the kofta or roast it in the oven for a fast daily meal.”
This Middle Eastern delicacy consists of minced lamb on a stick, flavoured with garlic, cumin, coriander, parsley, mint, pepper, mustard.
Firstly, start off by sizzling the lamb koftas on a grill or roasting them in the oven. Whilst their cooking, start prepping the yoghurt sauce and the salad.
Ingredients for yoghurt sauce:
- 5cm cucumber
- Small handful of coriander
- 1 clove garlic
- 1/2 cup Greek yoghurt
- 1 Tbsp lemon juice
Firstly, dice the cucumber, roughly chop the coriander, crush the garlic and mix with yoghurt, lemon juice and sugar. Then, season with salt and pepper and stir well.
Ingredients for salad:
- 1 large carrot
- 1 fresh beetroot
- 50g feta cheese
- 100g hummus
- 60g lettuce
Next, spread the hummus all-over the flat bread, grate the carrot and beetroot, dice feta cheese and add lettuce. Next order of business is to put the lamb koftas over the flatbread and salad. Lastly, drizzle the yoghurt sauce to top it all off. Simply divine.
