1. Stuffed Whole Chicken with Baked Sweet Potato
Created in-house by our expert butchers, our stuffed local chicken is made with fresh veal mince, garlic, onions, carrots, ham, cheese, Parma ham, pancetta, parsley, and salt and pepper. Since chicken is a dish that most health-conscious people tend to opt for, we’re giving you a side dish recipe that is more on the healthier side. Â
First off, gather the following ingredients:Â Â
- 2 sweet potatoesÂ
- ½ teaspoon of sea saltÂ
- ½ teaspoon of pepperÂ
- 1 tablespoon of chopped chivesÂ
- 2 tablespoons of pesto Â
- 2 tomatoesÂ
Start off by cutting the sweet potatoes horizontally in half and roasting them in the oven for around 40 to 50 minutes or until they’re tender enough to pierce with a fork. When they’re baked to perfection, take them out and slightly mash the middle with a spoon. Next add in the pesto, chopped chives and tomatoes, and season with some salt and pepper. Â

2. Orange and Chestnut Stuffed Duck with Potato Au Gratin
Next up is our in-house made duck, stuffed with oranges, chestnuts, and Italian sausages. If your mouth is already watering, just wait till you see this recipe for the perfect potato au gratin to pair with this tantalising dish. Â
Gather these easy to find ingredients:Â Â
- Â 3 tablespoons butterÂ
- 3 tablespoons all-purpose flourÂ
- 1 ½ teaspoon saltÂ
- A pinch of pepperÂ
- 2 cups of milkÂ
- 1 cup shredded cheddar cheese Â
- 6 medium thinly sliced and peeled potatoesÂ
- ½ chopped onion  Â
Whilst you’re preheating the oven to 180°, melt the butter over low heat then stir in the flour, salt, and pepper until it becomes smooth. Next, gradually add the milk, bring to boil, and cook and stir for about 2 minutes until it thickens. Remove the saucepan from the heat, stir in the cheese until it melts, then add in the potatoes and onion. Â
Finally, transfer everything to a baking dish and cover and bake for about an hour. Then uncover and bake for about 30-40 minutes until the potatoes are tender.  Â

3. Truffle and Parmesan Veal Frenched Rack with Roasted Potatoes
Prepared in-house by J&M Butcher’s superstars, our truffle and parmesan veal frenched rack is really and truly nothing short of exquisite. Brilliantly stuffed with rucola, truffles, and parmesan butter, this oven-ready meal is truly a festival of flavours. Therefore, we’re giving you a simple, yet scrumptious roasted potatoes recipe to add that finishing touch. Â
The ingredients:Â Â
- PotatoesÂ
- 1 tablespoon olive oil Â
- 1/3 teaspoon garlic powderÂ
- 1 tablespoon chopped and fresh rosemary, thyme or basilÂ
- ¼ teaspoon paprikaÂ
- Salt and pepperÂ
Start by preheating the oven at 210° and dicing the unpeeled potatoes into 1-inch cubes. Then, simply toss the potatoes, olive oil, fresh herbs, and seasonings together. Finally, place the potatoes on a baking sheet and bake for 30-35 minutes until tender and browned. Â

4. Stuffed Pork Shoulder with a Creamy Sweet Potato Mash
Last up is our succulent pork shoulder stuffed with Maltese sausages, back bacon, and prunes. To balance out the salty taste of the Maltese sausages and bacon, we’re sharing an easy creamy sweet potato mash recipe that’s guaranteed to impress.Â
Ingredients:Â Â
- 2 medium sweet potatoesÂ
- 1 teaspoon of fine sea saltÂ
- ½ teaspoon ground black pepperÂ
- ½ teaspoon of fresh thyme or rosemaryÂ
- 1 teaspoon butterÂ
- 1 teaspoon sour creamÂ
Start by peeling and cutting the sweet potatoes into 1-inch cubes and put them in a pot of boiling water until fork-tender. Then use a masher or a food processor to mash the sweet potatoes and stir in the salt, pepper, thyme or rosemary, butter, and sour cream. Â
